My Cozy Kitchen Memory
My grandma made the best cabbage rolls. But they took all day to prepare. I was always too impatient to wait.
So I created this stew instead. It has all the same wonderful flavors. I still laugh at how much faster it is to make. This matters because a good meal should bring comfort, not stress.
Let’s Start Cooking
First, brown your beef in a big pot. I use a heavy Dutch oven. It makes everything taste better, I think.
Drain the grease and add your onions and carrots. The smell in your kitchen will start to change. It becomes so warm and inviting. Doesn’t that smell amazing?

Now, add all those good spices and the Worcestershire sauce. This is where the magic happens. The meat gets so flavorful.

The Heart of the Stew
Pour in the broth, tomatoes, and sauce. Add the ketchup and two bay leaves. The ketchup adds a little sweet touch.
Finally, stir in the rice. Bring it all to a boil. Then, put the lid on and walk away. Do not peek for 30 minutes. This matters because the steam needs to cook the rice perfectly.
Time to Eat
After 30 minutes, check your rice. If it’s tender, you are done. Take out those bay leaves and throw them away.

My Cozy Cabbage Roll Stew
I have loved cabbage rolls my whole life. But rolling each one takes so much time. One busy evening, I decided to just toss everything into one pot. The result was this wonderful, hearty stew.

- 1 pound ground beef
- 1 medium onion, chopped
- 2 carrots, chopped
- 2 cloves garlic, minced

- 1/2 teaspoon paprika
- 1/4 teaspoon thyme
- 1 small head cabbage, chopped
- 4 cups beef broth
- 1 (14.5 ounce) can diced tomatoes
- 1 (8 ounce) can tomato sauce
- 1/4 cup ketchup
- 2 bay leaves
- 1/2 cup long-grain white rice
- Fresh parsley, for garnish
Instructions
Step 1: Grab your big pot and brown the ground beef. Cook it until it’s no longer pink. Then, drain off any extra grease. Add the beef back to the pot with the onions, carrots, and garlic. Cook until the onions look soft and clear.
Step 2: Now, it’s time for all those lovely spices. Pour in the Worcestershire sauce. Then add the salt, pepper, and all the powders. Give it a good stir. This is when the magic starts. The aroma will make your stomach rumble.
Step 3: Next, add the chopped cabbage. Stir it around for a few minutes. It will start to wilt a little. Now, pour in the beef broth, tomatoes, and tomato sauce. Add the ketchup, bay leaves, and rice too. (A hard-learned tip: Don’t peek under the lid while it simmers! The rice needs the steam to cook properly).
Step 4: Bring everything to a boil. Then, turn the heat down low. Cover the pot and let it simmer for 30 minutes. I use this time to set the table. I still laugh at how impatient I get waiting.
Step 5: After 30 minutes, take off the lid. Check if the rice is tender. If it needs a few more minutes, just cover it again. Finally, find those two bay leaves and take them out. Sprinkle with fresh parsley. It’s ready to serve!

Ingredients
Instructions
- In a Dutch Oven add the ground beef and cook over medium heat. Cook until meat is no longer pink. Drain grease. Add beef back to pan along with onions, carrots, and garlic paste. Cook until onions are soft, about 5-7 minutes.
- Add Worcestershire sauce, salt, ground black pepper, garlic powder, onion powder, paprika, and Italian seasonings. Stir to combine.
- Add cabbage to pot and let cook for 2-3 minutes, stirring often. Add beef broth, petite diced tomatoes, tomato sauce, ketchup, 2 bay leaves, and rice to the pot. Stir well to combine. Bring to a boil. Reduce heat, cover and let simmer for 30 minutes. Don’t uncover the pot while cooking as the rice needs to cook through
- At the 30 minute mark remove the lid and check the doneness of the rice. Cook covered for an additional 5 minutes if the rice still needs to cook and soften.
- Remove the bay leaves and discard. Garnish with fresh chopped parsley and serve hot.
